Ingredients – makes 4 fish cakes to serve 2.
2 medium sweet potatoes
3 small cod fillets
4 babybel light
20g golden breadcrumbs
Peel and dice sweet potatoes then boil until soft. I used three medium sweet potatoes to make four fish cakes.
While the sweet potatoes are boiling, cook your cod fillets (steam/microwave/bake, your choice.)
Once both are cooked mash together with seasoning, chopped garlic and chopped chillies.
Form into patties and press a babybel light into the middle. Drop into breadcrumbs and coat.
Repeat until you’ve made them all, spray with fry lite and pop in to a preheated oven (180/200) for 20 minutes or until crisp.
