Short and sweet again.

I do hate it when modern technology lets you down.

Today’s blog post will now be posted tomorrow as I am currently writing this on my phone as my interest doesn’t seem to want to play ball!

I had typed all tonight’s blog out so hopefully in the morning I can publish straight away 🙂
(I’m too tied to type it all up on here again!)

So for now you’ll have to endure some envious views this morning of the sunrise and some selfies 🙂

What is my target?

I have had a lot of people ask me recently: “what is your goal weight”, “what is your target” etc.

I always gave them an honest answer, which was: “I don’t know” because I didn’t actually know!!

But I do now, so here goes…

This is a lifestyle change for me, not a quick fix, I understand it will take time, and I want to do it properly.

As much as I would love a quick fix and to wake up tomorrow at  size 10 I just think for me I need something slow and steady in order to maintain it for the rest of my life.

The reality is I have to lose a person. In fact my boyfriend weighs around what I need to lose and he’s over 6ft!!!!

So here goes.

In aprox two years time I will graduate (all being well) from Falmouth University with a degree in Journalism and want I really want is to be able to walk head held high, in my graduation cap and gown and be the best possible version of me.

My dream aim for my graduation is a size 12 (although I wouldn’t be too disappointed if I was a 14)

So two years, aprox 12/13 stone, and 6 or 7 dress sizes.

I can do this. ❤

Butternut Squash Soup

Another firm favourite of mine 🙂 ❤

 Ingredients:

2 x Red Onions (you could use white I just prefer red.)

2 x Cloves of Garlic

2 Carrots

1 x Big Butternut squash

2 x Chicken or Veg Stock (I used one of each combined with 2 Litres of boiled water)

Paprika aprox 2 tsp but adjust to taste

Turmeric aprox 1.5 tsp but adjust to taste

Salt & Pepper to taste

Coconut Oil

 

Method:

Sweat onions, garlic, paprika and turmeric in a pan with coconut oil (frylite/olive oil) when they are caramelised with the spices, add the litre of stock and bring back to the boil.

Add seasoning, chopped carrots unpeeled and butternut squash. Let the veg cook through, when cooked bring off the heat and blend. 

Add more seasoning if required.

Carrot, Cumin and Sweet Potato Soup

I am a big soup fan and this is one of my fav recipes that I concocted, it is filling and yummy and takes less to no time!!!

 

This recipe makes lots of portions, so stick it in the fridge or freezer for when you simply can’t last until dinner time.

 

Ingredients:

2 x Red Onions (you could use white I just prefer red.)

2 x Cloves of Garlic

Aprox 10-12 Carrots

1 x Big Sweet Potato

2 x Chicken or Veg Stock (2 Litres of boiled water)

Cumin to preference (I stick loads in!)

Salt & Pepper to taste.

 

Method:

 Add seasoning, chopped carrots (I didn’t even peal them!) and sweet potato. Let the veg cook through, when cooked bring off the heat and blend. 

Add more seasoning if required.

Cheeky/naughty weigh in.

Ok so I actually only braved the scales yesterday, and already I have had a cheeky weigh in this morning to see how I’d been getting on.

I know I’ve been losing weight even though I hadn’t managed the scales until yesterday.

My jeans feel looser, my belt is now on the tightest fitting when it was around 3 away from it before.

But today I was curious to see the numbers.

Well from the time I weighed yesterday to this morning I have lost 2lbs 😀

Chuffed to bloody bits ❤

I braved the bloody scales!!!

There are a few reasons why I have steered clear from scales, it isn’t actually the most obvious one people think either!

I do not avoid them through fear the towering numbers will send me into a binge eating, self pitying, wallowing sadness. It isn’t the fear of how fat I have become. It is the fear of how far I have to go.

Why did I want to look at the scales when I commenced a diet to only realise I had around 12 stone to lose (168pounds.) That figure just seems so far away.

One day at a time. One target at a time.

Until today.

This is it for me, this is my journey and I don’t bloody plan on stopping until I’ve reached the size I want and am comfortable with, so why shouldn’t I know how much I weigh so I can record just how much I’ve lost.

This is a big mission and at the end of it I want to be able to stand up and say I lost all this weight and I am proud.

So if you are at home avoiding the scales for similar reasons or even an entirely different one then be brave and take the plunge.

This is your life only you can change it.
